Different evaluation options for Wagyu meat

 

Different countries have very different ways of assessing Wagyu beef. For example, in the Japanese system, a score of 8 IMF (Intramuscular Fat, or marbling) corresponds to a fat content of 43.80%. However, in the Australian system, this would be at least 19% fat content. A significant difference! In America, there is another system based on grades. The following table shows a comparison. Essentially, where the Australian official classification ends, the Japanese one begins.
